Brasserie Les Halles is a typical Parisian brasserie, bustling and lively, serving the fresh and simple dishes of France's everyday cuisine. "Les Halles" is the old market district of Paris where for centuries, all kind of food stalls, restaurants, brasseries, bistros and cafes fed people from all walks of life, around the clock. Brasseries differ from the other establishments by being larger, serving nonstop for extended hours and having many offerings of small or large dishes of fish, meats, poultry and vegetable prepared simply or with century-old elaborate recipes.

Brasserie Les Halles is the home base of Chef-at-large Anthony Bourdain,author of the best selling Kitchen Confidential (Bloomsbury, May 2000) and host of the Travel Channel's No Reservations. Tony is also the co-author of the Brasserie Les Halles Cookbook (Bloomsbury, 2004) with proprietor Philippe Lajaunie.
