On Tuesday, January 11, 2005 the 6th annual Choucroute “Halles” of Fame was celebrated at Les Halles Downtown. Media luminaries, celebrity cookbook authors and stars of the kitchen sat down together to honor the noble Alsatian Choucroute and the individuals who personify the great brasserie spirit reflected by the traditional dish.

This year’s honorees were Jeffrey Steingarten, Vogue Magazine’s Food Critic and world renowned fan of Choucroute; Rozanne Gold, Author and Chef-Director of the Joseph Baum & Michael Whiteman Co.; Chef J. Joho, Chef/Proprietor Everest, Brasserie Jo, Eiffel Tower Restaurant; and Fred Frank of Dr. Konstantin Frank Vinifera who’s Alsatian style Rieslings have won numerous prestigious awards. Les Halles owner Philippe Lajaunie personally presented each honoree with a diploma recognizing their inclusion in the hallowed Choucroute “Halles” of Fame. Framed reproductions of each award join those of past winners lining the walls at Les Halles Downtown.

The dazzling four course meal began with Tarte Flambée (Alsatian Onion Tart) and Bouchée de Brochet au Riesling (Steamed Pike with Riesling Sauce and Mushrooms). The meal continued with the highly anticipated Choucroute Garnie au Gewürztraminer (Steamed Pork Loin, White Veal Sausage, Frankfurter, Smoked Pork Breast, Boiled Potatoes and Slow Cooked Sauerkraut in Gewürztraminer) and concluded with Strudel aux Poires, Glace Cannelle (Pear Strudel with Cinnamon Ice Cream). The dishes were accompanied by the delicious Rieslings and Gewürztraminer of Dr. Konstantin Frank Vinifera Wine Cellars. Guests were also treated to the joyful sounds of an Alsatian Oompa band and the sweet miens of lovely Alsatian maidens in traditional garb.

February is Choucroute month at Brasserie Les Halles. For the entire month yearning for this dish of sausage and sauerkraut can be sated at all of the Les Halles restaurants (New York, Miami & Washington D.C.) Featured of course is the classic Choucroute Garnie, a mountain of tangy sauerkraut that has been slow cooked in a Pinot d’Alsace white wine, with juniper berries, heaped with white veal sausages, smoked pork breast, and served with boiled potatoes. For the seafood lover there is Choucroute de Poisson with smoked salmon sausage, sea scallops, smoked herring and salmon caviar, slow cooked in a Riesling wine. Les Halles introduced Duck Choucroute (an urban take on the traditional Alsatian country Goose Choucroute, with duck leg confit, foie gras and duck sausage on a bed of sauerkraut, slow cooked in Gewürztraminer. Also on the list is the Choucroute Royale, slow cooked in Champagne.

RIESLING TASTING

This February Les Halles Downtown inaugurated our first free wine tasting led by our very own Master of Wine, Scott Carney. The event featured a variety of Rieslings that were paired with our special menu during February Choucroute Month. Please check back for information on future events.

Christmas in Bordeaux

For over a decade, Brasserie Les Halles has set the standard for the authentic French Brasserie experience as a hub of conviviality, wonderful comfort food and great company. Such spirit is especially strong at Christmas, a time for rejoicing with food and family. This year, Les Halles brought the tastes of tradition home to the restaurant by serving Christmas in France dishes from the region of Bordeaux, including the traditional Christmas Goose. Owner Philippe Lajaunie explains, “Bordeaux is where I am from, therefore I am particularly pleased to take you on a culinary holiday journey through my home province, and share our memories, sites, sounds and tastes through the foods and wines of the region.”

LAUNCH OF LES HALLES COOKBOOK

On Tuesday, October 19, 2004 nearly 250 chefs, foodie celebrities, stars of the press and friends of Les Halles gathered at Les Halles Park Ave. to party with Tony Bourdain in celebration of the publication of the Les Halles Cookbook.
